Why biofilm impacts food safety?

A biofilm is a community of microorganisms attached to each other and surfaces by the secretion of a protective and adhesive matrix​.

These matrixes protect the microorganisms from stress factors, such as disinfectants, UV-light, and dehydration but also works as communication lines between the microorganisms allowing the biofilm to grow efficiently in closed areas as well as on open surfaces.

Biofilm can have huge consequences on foodsafety, since it’s an optimal environment for many pathogenic bacteria such as Listeria monocytogenes and Staphylococcus aureus.

 

Since release of biofilm in food production occurs irregular and uncontrollable, it’s location can however often be difficult to pinpoint, and requires the right tools and experience to combat.

 

Kersia enzymatic products dissolve the polysaccharide matrix of the biofilm and allow the disinfectant to reach and attack the microorganisms from all sides.
